"Cheesy" Broccoli Quinoa

 

I'm finding that gluten free, dairy free and egg free is easier to make and tastier to eat then I ever imagined! This is the perfect side to pair with chicken.. Or even add the chicken into it! 

Ingredients: 
Quinoa 
Broccoli 
Vegan Cheddar Cheese
Salt and Pepper 

Directions: 
Cook Quinoa per bag instructions. When it's done, add in your cheese. Mix well until melted. Toss in broccoli and season with salt and pepper. Mix well again. Serve!
