Sausage Puttanesca


I switched up a few things from the "traditional" recipe because though we're not picky eaters, there's some things (katamala olives for example) that my Hubby won't eat. 

16oz penne pasta 
1lb Italian Sausage 
1 cup onion - chopped 
1 cup bell pepper- chopped
3 garlic cloves - minced
2 medium tomatoes - chopped 
8oz tomato sauce 
1/2 cup black olives 
1/2 cup Parmesan cheese 

Cook pasta per directions on box. Drain well. 

Meanwhile. Remove sausage from casings and saut√© with onions, peppers and garlic. Add salt, pepper and oregano to taste. Remove from pan and drain grease. 

Add tomatoes, sauce and olives  to pan and bring to boil. Remove from heat and add pasta. Mix well. Top with Parmesan cheese and stir.
